The purpose of this standard is to set forth a method for evaluating the
freshness of crustaceans and molluscs by means of a quantified organoleptic
appraisal.
2. FIELD OF APPLICATIOn
This standard applies to species of whole, fresh or refrigerated species of
crustaceans and molluscs, whose freshness is to be evaluated when the product
is unloaded or during subsequent stages in the marketing process (plants,
wholesalers, retailers).
