The purpose of this standard is to set forth a method for evaluating the
freshness of fish by means of a quantified organoleptic appraisal.
2. FIELD OF APPLICATIOn
This standard applies to species of whole, fresh or refrigerated fish, whose
freshness is to be evaluated when the fish is unloaded or during subsequent
stages in the marketing process (plants, wholesalers, retailers).
